Extra virgin olive oil harvested during the second half of October, a period when the Moraiolo begins to express its full potential.
It has a distinctive herbaceous aroma with hints of fresh garlic and artichokes, in good years a slight peppery note can also be appreciated.
The DOP disciplinary of the Assisi-Spoleto hills imposes a minimum of 65% of Moraiolo oil, our traditional dop wants to go further up to mono-varietal (through an oil that can derive 100% from Moraiolo).
TUSES AT THE TABLE: excellent condiment for strong-flavoured foods, such as: fish, steaks, chops, cooked food.
A product that celebrates the traditionality of this quality that has been present in our territory for centuries, as it is the plant that shapes most of our landscapes and for which we are known all over the world.
