During this autumn phase, the olives begin to ripen, and the oil contained within them takes on increasingly delicate and golden hues.

A blend divided evenly among Leccino, Frantoio, and Moraiolo, whose aroma retains the fruity characteristics of oil derived from fresh olives.

As Leccino and Frantoio mature, they begin to sweeten, while Moraiolo contributes the complex and rich aromatic profile typical of Umbrian oils.
Fruity notes with herbal undertones.

The name recalls another renowned historical figure from our region; “Bonus Baro” (hence, Buonbarone) was the nickname given to Brother Elias, one of the most faithful and enigmatic followers of Saint Francis of Assisi, before he took his vows. It is said that he himself was originally from Beviglie, a hilly area of Assisi from which most of our olive trees come.
